There are two points in the bread baking process that you can shorten or elongate depending on how much time you have to babysit your bread:

Two factors controlling the activity of yeast are temperature and time (and time is the busy baker’s friend). A room-temperature rise puts you on a faster track to bread, which could be convenient if you have a day without plans or you just want bread ASAP (although we can also suggest quick breads for that). But in many cases rising can take place in the refrigerator. Chilling things doesn’t kill yeast or stunt its abilities, but it does slow down its activity, so rising to the appropriate level or fermenting adequately can take place over longer periods of time.
